Spaghetti Squash~ The Amazing Gourd!

Did you know that 1 cup of spaghetti squash is Only 42 calories, 10 grams of carbs(the good kind, has 2 grams of fiber and 1 gram of Protein? Well,now you do.In addition it contains omega-3 essential fatty acids and omega-6 fatty acids.Good for preventing heart disease, cancer and inflammation caused by arthritis and the omega-6 promotes brain function. It is also rich in beta-carotene, folate, potassium and vitamin B6! Whew!
If you didn't know that I'm sure it is safe to assume that you didn't know that it can be an amazing substitute for pasta in nearly all dishes that require pasta....Even lasagna! This Amazing gourd can be served in many different ways for breakfast, lunch and dinner...even as a snack! How do I know you might ask?? Well, I have tried it and I have been experimenting with it for the past few weeks. Here are a couple of my favorites...
I still am cooking on a budget and it just happens to be the season for all kinds of wonderful gourds. This means they are fully stocked at your grocery store and usually on sale!! I have been buying them for 77 cents a pound. I can get about 8 to 10 servings from one $5.00 squash

BUTTERED SPAGHETTI SQUASH

Ingredients:
* 1 Large Spaghetti Squash
* 2 Tablespoons butter or olive oil
* Salt and Pepper to taste

Steps:

1. Cut in Half long ways, turn flesh side down in microwave dish with 1 inch water. micro about 10 to 12 mins until soft. Or boil until soft.
2. Use fork to pull the squash strands from the shell onto a serving plate or bowl.
3. Mix with butter or olive oil.
4. Sprinkle with salt and pepper to taste.



CHEESY SPAGHETTI SQUASH
Ingredients:

* 1 lARGE Spaghetti Squash
* 1/2 TO 3/4 Cup Grated Parmesan Cheese
* 1/4-1/2 Cup Butter or Olive Oil
* Salt and Pepper to taste.

Steps:

1. Cook and Prepare Spaghetti Squash with your choice of basic methods (above).
2. Toss squash strands gently with butter, cheese, salt, and pepper.

SPAGHETTI SQUASH HASH BROWNS
Ingredients:

* 1 Medium Spaghetti Squash, cooked
* 1/3 cups all-purpose Flour (or try Whole Wheat Flour for a healthier dish)
* 1/2 cup Grated Parmesan Cheese
* 4 Tablespoons Butter or Olive Oil
* Salt and Pepper to taste
* Sour cream garnish (optional)

Steps:

1. Prepare and cook squash (see basic methods above).
2. Mix squash strands with flour and cheese.
3. Heat 1 Tablespoon Butter or Olive Oil in skillet over medium-high heat.
4. Spoon 1/4 cup of squash mixture into skillet.
5. Pat and press the squash mixture to form a thick "hash brown" cake.
6. Cook until bottom is lightly browned.
7. Turn hash brown over and cook the other side until lightly browned.
8. Continue with remaining squash mixture, adding butter or oil to the skillet as needed.
9. Sprinkle with Salt and Pepper to taste.
10. serve with a dollop of sour cream if desired.

SPAGHETTI SQUASH WITH TOMATOES AND HERBS
Ingredients:

* 1 Medium Spaghetti squash
* 2 Cloves Garlic, minced
* 2 teaspoons Olive Oil
* 1 Can Diced Tomatoes, drained
* 1 Tablespoon Chopped Fresh Basil
* 1/8 teaspoon Dried Oregano
* 2-3 Tablespoons Grated Parmesan Cheese (or Romano Cheese if you prefer)


Steps:

1. Prepare and cook squash using any of the basic methods above.
2. Sauté the minced garlic in the 2 teaspoons Olive Oil until it's softened and fragrant.
3. Add the tomatoes, basil, and oregano to the garlic and simmer for 10 - 15 minutes.
4. Spoon the garlic tomatoe mixture on top of squash strands.
5. Top with grated parmesan or romano cheese.

***WITH THIS ONE FEEL FREE TO ADD BROCCOLI AND MUSHROOMS YUMMMMMMY!!!

Easy Homemade Mac ~N~ Cheese

Seriously, who does not like Macaroni and Cheese? No one! Which is the reason this is the perfect dish to bring to any "Pot Luck", BB-Q (not everything has to be on the grill), picnic or even if your going to have a house full of teenagers at any given unexpected moment! Welcome to my world, Haaaa! This is so Easy to make and it can be done in Large batches to feed crowds and it takes no extra time to do so. With my kids back in school and in sports and hungrier then ever and their friends over all the time, I like to have this on hand because it is also easy for them to serve themselves and heat up fast! If it takes too much time or work to eat, they wont do it so I need to make sure it is already prepared and easy to get at! However, unlike my usual healthy alternative ways....I cant skimp on the goods w/ good ol' Mac and cheese! This recipe is from allrecipes.com I added the ground mustard to it!
Ingredients
1 (8 ounce) package elbow macaroni
5 tablespoons butter
5 tablespoons all-purpose flour
1 quart warm milk (110 degrees F/45 degrees
salt and pepper to taste
1 pinch cayenne pepper ( I add a couple pinches!)
5 ounces cubed Cheddar
5 ounces mozzarella cheese, cubed
5 ounces Monterey Jack cheese, cubed
paprika to taste
*** 1/2 tsp of ground mustard!
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 baking dish. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. In medium saucepan, melt butter and stir in flour to make a roux. Cook 1 to 2 minutes, stirring constantly, then whisk in warm milk a little at a time to make a white sauce. Bring to a boil, then reduce heat and simmer. Mix in salt, pepper, and cayenne, ground mustard and stir frequently until sauce thickens. Remove pan from heat and stir in cheddar, mozzarella, jack cheese. Combine pasta with sauce and stir well. Pour into baking dish. Use paprika to make a decorative pattern on top. Bake 45 to 60 minutes, or until top is the desired crispiness. Let rest 20 minutes before serving

Cowboy Caviar~Always a Hit!

Some people have been asking where I have been lately.....I have not blogged in 2 mos. I'm grateful to have so many people interested in my positive words and motivation and encouragement and of course my recipes! So, here's is a little bit of Positive Motivation-Dont give up on your dreams, if you believe in them you can make them happen. I have said it once, and I will say it again...There are No Unrealistic Goals, Only Unrealistic Expectations. It is so common for people to want it and want it NOW! However, some Dreams take time to manifest...Be patient, it will happen...whatever it is you desire. Of course you need to do your part and ACT on them. Brian and I have been working on a specific goal for over 5 years and in the last year it got more refined and in the last 2 months everything started to come together full force and just 3 days ago we accomplished it. Good things are worth waiting for, in the meantime, stay positive, light, and happy and if you need some motivation, I'll do my best to help ya out!

Now, onto the Recipe.......

This recipe was given to me by my good friend Michele Kohorn. It is Awesome! In fact, I'm blogging today after a Looooong 2 month Break from blogging because I thought I'd help you out with your menu for this Memorial Day Weekend! Serve it up with blue corn tortilla chips or any kind of tortilla chip you like and your Golden! BTW......I highly recommend that you Double the recipe because it goes FAST!
Remember, make it with Love and Smile while cooking, it makes everything taste even better!

Cowboy Caviar

Ingredients

2 (15oz) cans black beans, rinsed
1 (17 oz) can whole kernel corn, drained
2 large tomatoes, chopped
2 large avocado, diced
1/2 red onion, chopped
1/4 cup chopped fresh cilantro

Dressing
1 Tbsp red wine vinegar
3-4 Tbsp lime juice
2 Tbsp olive oil
1 tsp salt
1/2 tsp pepper

Directions

1. Combine all ingred. in bowl.
2. Cover and chill.
3. Garnish with avocado slices
or cilantro sprigs.
3. Serve with tortilla chips


**** I usually make a tiny bit more dressing.....AND sometimes add extra Avocado!!

A Twist on Turkey Burgers! Michelle Style!

Well, It has been a while since I have blogged and needless to say, I'm so behind....or am I?
I'm here today and time does not really matter when blogging unless I make it matter....or, unless someone is waiting anxiously to cook a meal based on my current recipe...then they would starve. Haaa, kidding of course, just amusing myself:)
Anyway, I have decided to take on a new attitude about the "blogging". It really does not matter when I blog the recipes I cook, create, tweak....I just do it when I do and it's all good.
Enough already with thinking "I'm sooooo Behind" I'm actually Right On time...as soon as I log in, start blogging, that is when I am supposed to begin.
I made up this recipe the other day in about 2 seconds and served it for lunch for Brian and I. It was so juicy and delicious and we felt Great because it was so healthy!


1 lb Lean Ground Turkey
salt and pepper to taste
2/3 cups of your Favorite Low calorie/fat Italian dressing
1/4 c shredded cheese of your choice...I used mozzarella
about 1/2 cup chopped spinach

Mix together really well with your hands! Divide into 4 patties and cook until done on skillet!

Serve w/ a side of spinach and a toasted sprouted grain bread! You can add tomatoes and onions and avocado. YUM!

The Pursuit of Happiness is the source of All Unhappiness!

Everyday there is something that we can be happy about..It Is up to Us to Identify what it is...and Ultimately Choose it over Unhappiness. This may not always come easily but, the more we do it the easier it becomes to find Happiness.
I'm finding Happiness lately in my Self-Discipline, Confidence and Motivation...all in which are helping me stick to my goals in life..which are becoming limitless!
Or maybe I'm sub consciously a little freaked out that I'm turning 40 in 4 days! I always say the cliche' "Age is just a number"...I truly believe it is but, being that I was raised during a time when people bought "Over the Hill" balloons for 40th Birthday parties I catch myself sometimes thinking that 40 really is a Big Deal...Although I know it is not. So, I continue to work out (sometimes 2 times a day) getting my body and health, in the best condition to confirm that 40 really IS ONLY A NUMBER! Hey, whatever it takes...life is what I make it. Which makes me want to bring up...be true to yourself and what really makes you happy. If your choosing something that does not make you happy, remember you chose it so, it is up to you to find your happiness in it.
This blog was not intended to be a journal however, it sometimes seems to be exactly that....But, I'm o.k. w/ it and if your reading it...hopefully your o.k. with it to. I think we all need each other and the confirmation that we are not alone or possibly that we are all really very much the same just just experiencing things differently. Anyway, I'm sending Positive Energy for Happiness today:)

Confetti White Chicken Chili...A Gift from Issaquah Wa!

You may remember a long time ago that I posted on FB a recipe that my kids Loved and even said it was restaurant style!
Or...then again, maybe you don't remember...
Well, I'm finally getting around to posting the recipe..TODAY:) This recipe is from my wonderful high school friend, Michele from Issaquah, Wa! This is another crock pot recipe and Very low cost, feeds my family of 6. I'm guessing now that I made this for approx. $ 13.00!

Confetti White Chicken Chili
3 15oz cans Great Northern or cannellini beans
1 1/2 cups chopped red, orange and/or yellow peppers (I use all three)
1 cup coarsley shredded carrot
1/2 cup sliced green onions
2 cloves garlic, minced
2 tsp dried oregano, crushed
1 tsp ground cumin (this really is awesome in this dish)
1/2 tsp salt
2 14oz cans chicken broth (No MSG)
2 1/2 cups chopped cooked chicken
Shredded cheese for garnish
1. Drain and rinse 2 cans of the beans and place in a 3-4 quart slow cooker. Use a potato masher or fork to mash beans. Drain and rinse the third can of beans (do not mash). Add sweet peppers, carrots, green onions, garlic, oregano, cumin and salt to the mashed beans. Stir in chicken broth until combined.
2. Cover, cook on low-heat setting for 6-8 hours, or high-heat setting for 3-4 hours (I think it tastes better on the low setting).
3. Stir in chicken, cover and cook about 15 minutes more until chicken is heated through. Serve with cheese.
For the chicken, I typically use frozen chicken breasts that I poach in water with poultry seasoning, onion, celery and lemon. Then I just shred the chicken. You could easily use a roasted chicken from the grocery store. If it seems a bit thin, after adding the chicken, I typically stir in a paste made of about 2 tbsp softened butter and 2 tbsp dry bread crumbs. It thickens it and gave it some richness too.

***Here's a little ""Michelle Tip"...SAVE the broth from boiling the chicken!! Use it the next time you make a crock pot soup in place of buying chicken broth...tastes better AND you save $$$$$$

We are Exactly where we are in life because of the thought's we have had. It's true....may not be a thought you had yesterday or last week or last year but, it could have been a thought you had 5 years ago....Think about it.
Our thoughts Are like a blueprint for what we will create, accomplish, overcome, begin....Everything.
We thought it, gave it Energy, and the Universe gradually began to work to bring to life the desires we have. Of course we need to do our part...we need to have specific goals, self motivation, discipline and the ability to take action when we see the opportunity to make decisions or changes towards achieving our goals after all, those opportunities are there because we asked for them.
Why am I sharing this....because lately I am experiencing several years of what were once "thoughts" become what is my living reality. I can look at everything happening in my life right at this very moment and I can link them all to my very own thoughts that I have had over the past 5 to 10 years!
Trust the Universe is working for you. You may not get what you want in life the moment you think it or ask for it but, if you re-visit the thought with positive energy, believe it will become reality then when it is right for you, it will.
Remember to focus on Positive thoughts...Your thoughts Create your life Experiences...so, make them Positive ones:)

7 Days....Gone so Fast.

It's been 7 days since I have blogged! It seems like yesterday. The days are flying by so fast. Possibly because I'm filling them with so much more! I'm not wasting a single moment...although, I still don't seem caught up. I guess if I were caught up I would wish I had something to do. So, I'm thankful for what I accomplish and thankful I still have something to do.
I am consciously challenging myself lately with new things. We really Can do whatever we want...we just have to try, get over the fear and have a Positive Attitude. Truly, the only limits I have ever had are the ones I set for myself based on fear or lack of confidence or a bad attitude...when that is overcome...a new life begins...Try it! After All...Nothing can Happen unless we choose to let it and make it happen...The mind is so powerful, all you have to do is tell it what you want and everything will fall into place. Believe it.
Promise...recipes tomorrow, I have been cooking like crazy and so much to share.

Low Carb Flax Bread!

This was another low glycemic Index inspired,healthy bread I wanted to try for breakfast or a snack. It only has 5 ingredients and is super easy to make....be warned...it has a very strong flax flavor and is best with some agave or honey warmed up...Mmm good!

Knowing this is filled w/ lots of Omega 3 and fiber and protein makes it even better!

2 Cups Flax seed meal
1 T baking powder
1 tsp salt
1-2 T honey (depending how sweet you want it)
2 whole eggs/5 egg whites
1/2 C water
1/3 C Olive Oil

pre-heat oven on 350prepare a 10 X 15 baking sheet with sides w/ Pam spray and wipe off excess
mix dry ingredients
mix wet ingredients
mix wet and dry ingredients together
spread onto baking sheet, let sit for a few minutes

bake for 20 minutes,cool cut into any size you want...drizzle w/ Agave or honey or a berry flavored syrup and Enjoy!

Quinoa Chicken Cranberry Soup

I have been into eating foods with a lower glycemic index lately. So, that is why I tried Quinoa! It is about 35 on the GI chart!! Meaning, this carbohydrate stays in the fat burning range instead of turning into sugar and storing into fat!!
This had a sort of ethnic taste that I cant really describe....the cinnamon, almonds and cranberries made this dish pretty exotic....It was originally supposed to be a casserole but, I changed it because I was too lazy to go to the store to buy the ingredients I was missing for the casserole...So, a soup was made! I would definitely try the casserole next time because I liked the Quinoa so much.

I bought the Quinoa,Almonds,Cranberries in the bulk bins for pretty cheap and the Chicken on sale of course...so this is another easy, inexpensive meal! I'd say around $10.00 at the Most!

1 1/2 cups Quinoa
1 lb chicken-any kind you like or have on hand
4 to 5 cups broth (depending how thick you like your soup-I used Chicken)
1 T Olive Oil
1/2 tsp salt
1/2 tsp cinnamon
1/4 c sliced almonds
1/3 c dried cranberries

Rinse Quinoa Very Well!! add everything in the crock pot on low for about 6 hours or high for about 4 hours! Half way through, shred the chicken and put back in the pot!

February 2010...Really, It's Over??

If your like me, your wondering where the days went in February....Seriously, I cannot believe it is March 3rd!! Not only does this mean I'm going to be 40 in a few weeks but, I'm really behind in ordinary, daily, life stuff!
It seemed like January was so easy...my focus was on all these "New Years Resolutions" and "Life Changing Goals" I was blogging regularly, cutting costs, cooking, tweaking recipes, etc...etc...and everything that was important, was front in line and getting all the necessary attention.
Then as things start looking up and the necessary life changes have been made and were working, it got easier to slack off a day or two. You know what I mean...if there's nothing to fix, why fix it type of attitude. Well, True, I have made some pretty amazing changes that started in January and they Have stuck but, when I took a break from them....I got crazy and added a few other projects!! And, now my plate is overflowing! I'm trying to find the time to manage it ALL w/o failing at any of them.
In addition to the time consuming project of cutting costs by smart shopping with coupons, daily specials, etc...cooking, meal planning, daily running, blogging, I have added, gardening....front yard AND backyard! So, needless to say Feb. has been BUSY! I'm trying to stay afloat. March will be even more challenging as I have added a local retailer challenge to incorporate a new workout each day or week...this week I will add pilates to my schedule.
So, the lesson learned....dont bite off more than you can chew!
Today I will attempt to get caught up on blogging, paying bills, And, OMG... cleaning my disaster of a house, blah, blah, blah! Hope your having an amazing 2010! I really Am! And, what keeps me sane is that I AM grateful each day for all this Stuff that keeps me so busy....it is after all everything I have chosen and like to do:)

BTW......in Feb. I still kept the grocery bill WAY down!! $ 732.00! Not as good as Jan. but, I tried A lot of New recipes and needed more:)
Also, I lost one more lb and almost 3" and I feel GREAT! I'm getting close to liking the idea of "bikini season"!!
Dinners at the dining table are more consistent and we are All liking the time together!

Spirulina balls!!!!!! A Healthier Snack:)

I dont know about you but, I Love going to health food stores and seeing what new Bar is out Promising Great Nutrition and Energy! I Always seem to be hungry between meals and so I love to try varieties of those types of snacks. Unfortunately, they are so darn Expensive!! Well, I tried one of those Spirulina balls and loved it so I searched for a recipe to create it myself and sure enough I found one very much like the ones sold at the health food store. Here's the Best part....I made 36 of them for approx. $10.00!! That's 28 cents each!!! They sell at health food stores for 1.50 and UP!!! Yes, it's true. My kids liked them...not loved but, they ate them and that makes me happy because they were loaded with spirulina and that is such a great protective nutrient and great for the immune system! Here's the recipe, I hope you like it!

250 gr (approx. 1/2 lb) raw almond butter
1/2 cup brown rice syrup or honey
1 tsp vanilla extract
1/4 cup blueberry juice ( I used Apple)

2 1/2 tbs pumpkin seeds, freshly ground
2 1/2 tbs sesame seeds, freshly ground
1/3 cup sunflower seeds, freshly ground
1/3 cup flax seeds, freshly ground
1 1/2 tbs spirulina powder
1 tsp cinnamon
1/2 tsp vitamin C powder (optional) ( I used a multi vitamin powder by: All One)
1 tsp salt (optional)
1/8 to 1/4 tsp Stevia white powder (to taste)

1 3/4 cups quick oats
1 cup puffed millet
2 tbs rice bran, packed (this ingredient may be omitted and replaced with more quick oats)

Directions

Food process first four ingredients. In separate bowl, mix together next nine ingredients. Add to nut butter mixture and process. Transfer mixture to large bowl. Add quick oats, millet and rice bran (if using). Mix until well combined. Make balls or squares. Store in the refrigerator.

FYI....when rolling these balls it is VERY Sticky and messy:) I rolled them in finely shredded coconut and put them in a Tupperware container and in the fridge!

Good Vibrations!

What a busy week!

So many things I want to share that I'm not sure where to begin...So, I will begin with Today. I finished a 3 day trial for The Whole Body Vibration. I will try to make this short...It has proven results for bone density and muscle mass. It is known to show in some people quick weight loss and loss in inches. It is being used for weight loss, muscle strength,flexibility,toning, cellulite loss and much more...which all in turn lead to better overall health benefits like less stress, more energy etc....Whew! I think that is the best I have explained it so far! As a health and fitness conscious person, I of course have been interested in this since I have heard about it. However, As we all know I am on A Budget!! Sooo, I dont just jump at every opportunity of a promised better for your health program or machine! When my favorite herb store began to offer a 3 day FREE trial naturally, I jumped on that! The trial is 3 days because that is haow fast you can see results.
Soooo, at todays final measure in I had lost a total of 2 3/4 inches!! WOW! The best thing is it was in my problem areas that I was hoping it would help...my hips and tummy!! Now, I did notice that today while running I felt much stronger and that I could have gone faster but, I'm also not sure if that could be contributed to the lunges I began doing this week!There! Now you wont have to wonder if it works next time you hear about it and are curious.

"I Told You So" .........

Is pretty much what my hubby said when I told him I started to really notice a change in my body shape after only 2 days of doing lunges. BTW...That was 335 lunges in one day and 15o the next!! He has been telling me forever to add in strength training, lunges,squats etc...because I'm not going to get the results I want from running alone. So, of course I never listened but, on my own time and in my own way there I was, lunging up the hill to our house in order to challenge myself to a better workout that day! Now, I'm Hooked! I love to lung:) So, if you need a boost in your workout routine and a boost in your back side...try lunges:)

The Vemma Thirst challenge!!

Have you heard of Vemma, Verve, Vemma thirst?? Well, My father in Law sells it! I have given Grayson the vitamins and he loved it. I am not a big supplement person and I already feel great so I was never actively into looking for a feel good supplement aside from the basics..a multi vit, and vit B's and some spirulina or a green powder to get my greens in.
However, since I have been running so darn much I have noticed some changes...Im always HUNGRY And, I crave sugar often..with some research I have modified my diet with the GOOD Carbs instead of the BAD carbs....so far that is working well! The sugar cravings are down a lot and I dont feel so hungry ALL the time...I have still been looking to find a drink or something to replace my electrolytes along with refueling my body after a workout...Here is where the Vemma Thirst comes in. Randomly...yesterday, my fathere in law, Richard told me all about the New Vemma Thirst because he knew that I was a runner and he thought It could help me with my working out. I know, another reason I'm so lucky:) Dont think I didnt already think about that. Michelle's Chicken Barley Soup..because it's a Good Carb!

I have been reading a lot about the Good Carbs Vs. Bad Carbs and how the bad carbs are responsible for no weight Loss or possibly the reason we Gain weight...In addition, the conversion to sugar is higher with most of the "Bad" carbs... causing us to just spike in energy levels only to quickly crash!
Why am I telling you this??? Because that is why I decided to make the Chicken w/ Barley tonight instead of white rice....that's all...LOL!! I just ate this soup and it was so good! The whole family liked it and all I did was throw it all in the crock pot...and I use my Awesome rice cooker to steam the barley!
I have to admit that One of the things that is a bit challenging with this blog and writing the recipes is ...I sometimes just wing it...meaning I don't necessarily have an exact measurement for some of the ingredients I use. Tonight I didnt follow a recipe at all...I just made it up but, I knew I wanted to post it so I eyeballed the amounts of everything I used so I could tell you. Feel free to eyeball the amounts you may need too:)

Michelle's Chicken Barley Soup

  • Approx 1lb of Chicken (whatever kind you have that saved you money on sale:)!!) I used 1/2 breasts w/ bones and 1/2 way through I took the chicken off the bone and shredded it.
  • 6 cups chicken stock total (if you have homemade use it all. If not use 2 1/2 cups water and 2 1/2 cups chicken stock.
  • 1/2 onion chopped
  • 1c celery chopped
  • 1c carrots chopped
  • 2 cups barley (steam separately then add the last hour!) This keeps it from getting too mushy.
  • salt and pepper to taste and a clove or 2 of garlic to taste:
Add everything to the slow cooker and set on high for approx 5 hours! I started this at noon , steamed the barley and added it at the last hour!

Amazing Energy Pancake!

This is a Great Pancake for Lasting Energy! It is light, yet filling and tastes Great! I eat this after a workout because it is a great amount of protein, Carbs(the good kind) and the banana has a lot of potassium which is great for my legs. Blueberries are another "Superfood" providing antioxidants and fiber!

The Story...because you know there usually Is a story!! This recipe came from a past client of mine. She would come into the boutique that I worked at and she always looked Amazing! What was so Amazing about her was her Positive and Upbeat Energy! Now, I worked in Newport Beach, Fashion Island(the home of plastic surgery) so seeing 60 year old women looking like a million bucks was common but, usually came at the hands of a plastic surgeon but, I knew she was different. She was in her 60's but, she ate healthy and stayed very active! I know this because I was dying to know her secret...so I flat out asked her! She told me she had not had any surgery and She said she practiced Yoga, went roller blading etc...AND she swore the main thing that gave her this sustained Energy All day was this pancake!! So of course, I made it the very next morning and have been making it ever since! I think when life presents us with great lessons or secrets they need to be shared with others....so, here is the recipe! Hope you like it as much as I do.

Amazing Energy Pancake!

1 package of organic instant oatmeal (good kind)... any flavor w/o added sugar...flax seed is my favorite! Costco has a great organic brand with the flax seed flavor
2 egg whites
1/2 Ripe banana
Blueberries...as much as you like in your pancake approx...1/3 cup
**This makes one pancake so adjust the recipe if your making for more then yourself!

Mix the egg whites in with the oatmeal and mash in the banana, mix well then fold in the blueberries. pour onto heated skillet and flip when side is brown. pancake will be a bit moist inside but, is ready when both sides are lightly browned. Top with a little Honey, or Natural Syrup.

Not So Quick BUT, Hands Down the Best Lasagna!

Yesterday I began at about 2:30 to start making this Amazing lasagna! I knew it was going to be Amazing because I had already made this recipe before.
Although I have become somewhat of an expert on shopping with coupons, tracking the grocery store specials and "working it" with the double savings deals....this is still one of those "High and Mighty Meals" as it still cost me approx. 15.00 to make. However, last night it served 8 servings and there's a good 5 servings leftover!!! A perfect meal to make for company or if your looking to have enough for leftovers.
Did I mention why I decided to make this yesterday? Because, ya know, I normally wont make such a time consuming meal unless there's a good reason...I mean after all this IS all about Quick and Easy on a budget:) Well, here is one of the joys of teenagers! My son asked when a good night would be to have his girlfriend over for dinner for the 1st time, I said Thursday. So, Wed. I told him to confirm that she would be coming. He said he would text me Thursday from school if she wasnt going to come. So, Thursday comes, No Text, I start cooking early because it does take 3 HOURS!!
Long story short.........Oops, I forgot to text you, mom!!.....SHE'S NOT COMING!!
Anyway, it was great to make because my daughter got involved with me and she helped w/ the lasagna and she made homemade garlic bread. This is after all why I like cooking so much...it get's the family more involved:) So, here is the Amazing recipe I found online. I made just a few modifications like using fat free cheese and extra lean ground beef:) I hope you enjoy it and have fun making it with someone you Love spending time with...this is perfect for that!

Ingredients

  • 1 pound sweet Italian sausage
  • 3/4 pound lean ground beef(EXTRA LEAN)
  • 1/2 cup minced onion
  • 2 cloves garlic, crushed ( I used 4!!)
  • 1 (28 ounce) can crushed tomatoes
  • 2 (6 ounce) cans tomato paste
  • 2 (6.5 ounce) cans canned tomato sauce
  • 1/2 cup water
  • 1 1/2 tablespoons white sugar
  • 1 1/2 teaspoons dried basil leaves
  • 1/2 teaspoon fennel seeds
  • 1 teaspoon Italian seasoning
  • 1 tablespoon salt
  • 1/4 teaspoon ground black pepper
  • 4 tablespoons chopped fresh parsley
  • 12 lasagna noodles
  • 16 ounces ricotta cheese( I used fat free)
  • 1 egg
  • 1/2 teaspoon salt
  • 3/4 pound mozzarella cheese, sliced (sliced is what makes it stay nicely together when you cut it!)
  • 3/4 cup grated Parmesan cheese

Directions

  1. In a large skillet cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  2. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  3. Preheat oven to 375 degrees F (190 degrees C).
  4. To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  5. Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.
****Letting it cool will also help keep it from falling apart when you cut it!

Sometimes fear can be mistaken for excitement...

I LOVE LUCY!!!!

OMG...........I JUST HAD TO SHOW YOU THIS!!

SO, FYI.... WHEN DIRECTIONS SAY "LET THE DOUGH RISE FOR 3 TO 6 HOURS" THEY MEAN IT!!! I THOUGHT..."WHAT THE HECK, ONE HOUR IS FINE" THEN AS I OPENED THE OVEN TO CHECK ON MY BEAUTIFUL CHICKEN POT PIE...THIS IS WHAT I SAW!! I REALLY THOUGHT OF THE , I LOVE LUCY EPISODE WHEN SHE BAKED THE LOAF OF BREAD AND WHEN SHE OPENED THE OVEN DOOR THE WHOLE THING CAME CHARGING OUT OF THE OVEN! I TOLD GRAYSON THAT IT LANDED HERE FROM OUTER SPACE:) WELL, I'D LOVE TO GIVE YOU THE RECIPE BECAUSE IT REALLY DID TAST VERY GOOD BUT, I AM GOING TO CHANGE A FEW THINGS FIRST...STARTING WITH THE DOUGH! How Does Your Garden Grow?

Well, I have So much to Share...many recipes, I'm so behind YIKES!, some thoughts...just because I want to talk to you, and, this is also my sounding board:)

First, let's start with change...there has been a lot of change going on with me. I have actively been looking for a job and it has been 2 years since I have worked out of the house. I started slow...chose just one company to pursue but, have since applied to 3 more retailers.....I have to admit, I have some issues lately with my self confidence and I'm trying to change that because if you know me, you know that I truly believe that what we put out there IS what we get...So, I have a fear if I dont get over my self confidence issue, I wont get a job!! However, I worry a bit that since I have not worked in 2 years in the field I'm pursuing, that my resume' may not be as desirable anymore.

Yesterday, I planted a garden! I'm so proud! My hubby got me everything I needed and came up with the idea of how to do it small yet different and unique...it's not your ordinary garden for sure. When it is totally finished, I will post a picture. So far there's corn, tomatoes,carrots, onions,beets,basil,oregano!! What is very cool is that this was a seed we had planted a while ago...Meaning, we talked about the things we would like to have someday(that would be more green, healthy etc...) and seeing them finally come into our world is proof that if you want it, and your positive and believe in the possibility, you can make it happen! That motivates me:)

As I'm typing, I'm making homemade bread and it sounds amazing! buying all the ingredients and knowing how good it will be for us was so motivating! What is so cool is that I was given this recipe from a new fb friend who is a cousin of a friend who congratulated me on my blog after he saw the post on her fb page!!! WOW! So I'm feeling pretty lucky and proud right now for so many things. Thanks for reading and letting me share with you:)

Oh, I almost forgot!!! My hubby also built a clothesline...stop laughing...I'm totally Serious!! I started using it...well, sometimes (I'm still getting the hang of it) Anyway, our gas/electric bill was $7.00 cheaper last month!! So now I'm so motivated to use the clothesline even more....it saved us $$ when I didn't even use it as much as I could have, It's Better for the Environment AND it is saving the life of our clothes!!

I read a quote the other day..."It is important to go out in the world and Be Good but, it is more important to go out in the world and DO Good!"...I feel like I'm DOING Good and that really FEELS Good:) Peace!

Tasty Chicken Enchiladas...... Almost Homemade..

I seriously searched for a recipe that was Easy and healthy and that used a red sauce with the Chicken Enchiladas. It was pretty overwhelming because there wasn't anything that really sounded good to me...I'm sure they were all good but, it was just one of those days where I was very indecisive and ...well, I'm sure you get it. We all have those kind of days. SO, I basically made up my own recipe...It did get good reviews. I took the tray to our neighbors, baked them there and they, along with my hubby were my guinea pigs for the first batch of Chicken Enchiladas. They were pretty Great...either that or the drinks were helping out the flavor LOL! Seriously, they were good, just give em' a try yourself:) BTW....This was not expensive at all! I had chicken I bought on sale, ricotta cheese was on sale and I had everything else at home! I's say approx....under 10.00 for sure and it made 2 baking dishes full...one large dish, one medium:) Thanks for reading.

4 skinless,boneless,Chicken breast halves
1 med onion,chopped
fat free ricotta cheese
1 c shredded (light) cheese..I like the mexican blend
1/2 tsp dried oregano
1 tblsp dried parsley
/2 tsp dried pepper
2 cloves garlic chopped
1 can green chilis
approx 15 corn tortillas
1 15 oz can of your favorite Enchilada sauce


*boil chicken with some onion and garlic until not pink in the middle
*remove and cut chicken in cubes
(Helpful TIP! Save remaining broth for a later recipe that calls for chicken stock!)
*put in a skillet and add the rest of the ingredients. along w/ 1/2 cup of the broth..stir until cheese melts.
*remove from skillet and prepare the tortillas for filling...
I heated the tortillas in the microwave to avoid softening them with the classic oil in the skillet light frying...just because I figured if I can...why not?
*This worked well....then I dipped the tortilla in the enchilada sauce, filled it with the mixture,rolled it and placed it with the fold side down in a baking dish.
Once the dish is filled, tope with remaining Enchilada sauce and Mexican Blend Cheese
bake on 350 for approx 30 mins.

***If you have a Homemade recipe for the Enchilada sauce...use it instead if you want...I just happen to have a can of sauce in my cabinet...I thought...Cool, less work for me...I might as well try it!

Anna's BBQ Chicken Sandos!! Under $8.00!!

I Love That my family and Friends are sharing Yummy Recipes with me. It makes this so much more FUN! I made this recipe for the kids and their friends this weekend and it got the "Will You make this again?" review!! That's What I like to hear...Also, I do LOVE leftover's However, when there are NO leftovers, that is also a Positive Review for me! Thanks for the Recipe Anna!

Anna's BBQ Chicken Sandos!

6 Chicken breasts
1 12 OZ bottle of BBQ Sauce...(A good one)
1/2 Cup Italian Dressing (This gave some Tang)
1/4 c brown sugar
2 tblsp Worcestershire sauce

Cut breasts in 1/2 put in slow cooker
mix all ingredients and pour over chicken
cook on low for 4 to 6 hours
1/2 way through , break away chicken and shred

Serve on Rolls w/ whatever kind of cheese you like!! I made a roasted, seasoned potato to go along with it! Salad is a good side to add as well!!

Michelle's Thought's

Soooooo, Here is How I think about things.....
I believe that if the CORE Values or Your Developed Foundation for a Positive, Healthy Life Style is Already in place and it is 90% of the Time How you Live ..... Then the remaining 10% IS and Should Be your Treat! Eat, Drink and Spoil yourself....In Moderation!
I also find that Moderation in Everything we eat or do makes each time much more of a treat to look foreword to and Enjoy as if it were the first time...Someone once told me..."It's Like Chocolate Cake, if you eat it once and a while it is an Amazing treat and you get excited to have it, If you eat it Everyday, it's not so special anymore."
Depriving yourself of any Desire is..In my Opinion Not So Healthy.
Why am I saying this...Just because, It has been on my mind and this is after all My blog...which is sometimes my own therapy.....And the thought Is there for a Reason...Maybe I'm reminding myself that it's o.k. for Me to eat something sweet and not feel so bad about it or, Maybe Someone out there who is reading this needs to hear this toady to be reminded! What You THINK about IS what You Will Get! Think Healthy Thoughts! Eat Healthy Food:)

When I say "Think Healthy Thoughts" I was not really referring to healthy thoughts about food...however, it does happens to be true also. If you think Healthy, you will want to eat and be healthy and what you think about will ultimately be what you do! So theres my Positive Pepe Talk for the Day...THINK POSITIVE THOUGHTS:)

The Healthy Thoughts I was actually referring to is my relationship with my 13 year old daughter, Madeline. To make this short, I will say this......When you trust that the Universe is working for you and Not against you and you let go of any Negative thoughts...then things will Positively Change. I had been thinking Negative thoughts about how my daughter does not think Im cool, and doesnt like to hang out with me anymore or talk to me....so, what do you think happened??? Right, she didn't want to hang out or talk to me! However, I recently remembered that, I'm Am the Queen of Positive Thinking and Positive Attitude;) And I Stopped thinking Negative and began to think Positive about this situation so, I began with positive affirmations..."She will talk and hang out with me soon" etc...etc... And That Is Exactly what is happening!! Believe in Yourself and Control your Thoughts! The past 2 days have been such a nice reunion w/ my Sweet, Loving Daughter:):)

I Like to Share Positive stories , that is mine for today....Tomorrow I promise I will have a couple recipes!! I know I'm so Behind...Blogging, clipping coupons, cooking and everything else in between takes a lot of time:)

Lisa's SUNDEVIL Chili..........Thanks Sis!!

I was chatting w/ my sis the other day and she was telling me about this Amazing Chili she made for dinner in her Crock Pot so of Course I had to cash in on that good idea for my family And my Blog! When I got home, I forgot some of what she told me AND I didn't have All the ingredients but, I worked it out and here is what I came up with and it was AWESOME!

I Also Re-Named it ....."Lisa's SUNDEVIL Chili"...because she is a Die Hard ASU Sundevil FAN! (I have not told her this Yet...I hope it goes over well)

1 lb LEAN ground Turkey
1 tblsp Olive oil
1 med onion (1 cup chopped)
1 15 oz can kidney beans
1 15 oz can black beans
1 15 oz can chili beans
2 15 oz cans diced tomatoes w/juice
1 tblsp chili powder (Now...My sis used a chili seasoning pack AND
1 tsp red pepper flakes added a Ranch dressing seasoning pack..but,
I didn't have it so I used my spices...)
1/2 tsp garlic powder
1/2 tsp cumin 1 pinch of black pepper
1 pinch of allspice
salt to taste

(If you want it thinner....add a can of tomato sauce!

brown the Turkey and onions in a skillet with the olive oil then transfer to the crock pot with All the other ingredients...8 hours on low or 4 hours on high!

Shopping 101

I have a friend who asked me how I plan meals, shop, etc....Well, I'm Not gonna Lie it's a pain in the A** if Time is Not on your side....However, Time, lately....Is on My side so Blogging, Cooking, Clipping Coupons, and Making detailed Grocery Lists are all Possible for me so Saving Money has sorta become part of my job....Instead of bringing money IN, I decrease what goes OUT...It's a Positive Approach Anyway...

It goes a little like this:
Research some Recipes so any special ingredients get on the Grocery List!
Always keep the staple items on hand ....onions,potatoes,celery,carrots,stock's,spices,etc....
Go online and print manufacturer coupons
Go online and print the coupons for the store you are going to shop at
Make a list online for that store(there's a section you can do that at)
Make sure you buy Their specials And look for coupons to Double the savings!

YESTERDAY I SAVED $106.00!! IT REALLY WORKS AND IT's WORTH IT! GOOD LUCK!

And Thanks to My Husband .......he reminded me that Not Only did I save 106.00 But, The 175.00(actually 281.00 worth of food) that I did spend was will stretch even farther because it was spent on quality items to make MANY meals that will feed the Big family....so basically, you spend less and get more when Your Cooking and NOT just Heating Up and Preparing...However, I have to Admit last night was a TREAT night and I bought a BIG Pizza for 5.00!!!!(Store Special of course...gotta Love the Super Bowl!)

Are You Ready for a Potato Chip Alternative??

KALE.......I know, I know, it's a Vegetable and the thought of suggesting that it replace your wonderfully, greasy, salty potato Chip is close to criminal...right? But, if you could subdue the craving for chips with something....Ummmmmm that is, In the food world considered a SUPERFOOD and is Rich in Minerals such as calcium, magnesium, iron and potassium not to mention it's loaded with Beta-Carotene and studies suggest that the phytonutrients can help the liver neutralize some potential cancerous substances would you Maybe , possibly TRY it?? I thought so:) SO, here's the Recipe: OH..And Did I mention that 1 cup of KALE has 35 Calories and ZERO FAT?? Thought you might like that!

KALE.....Yes, I know there are so many kinds! For Chips, I choose the ones with the curlier, thicker leaves.
Sea Salt or a salt alternative
Olive oil

Break the KALE off the stem in Chip size pieces put in a bowl.
Use your hands to thoroughly cove the KALE pieces
(Use Enough KALE to cover a baking sheet)
This means you will only need approx 1/2 tsp to one table spoon of oil and cover with sea salt but, GO EASY and I mean EASY.....(Too Salty, is only good in the trash)

Pre Heat Oven to 400 and put the KALE in for Approx....15 mins. Check on it, as every oven is different....It needs to get crispy but, not burnt...I have burnt and under cooked, it is definitely an Art and might take practice...but, it's worth it!

What Do You REALLY Love?

Someone asked me if I really do "Love" cooking. The answer...is that I Really Love Making a Positive Change, that has A Big Positive Impact in Many Ways...and the Cooking just happens to be One of the Tools that Let's Me Accomplish All of that Right Now. I am Motivated by Positive Results and Change or Ideas that are Ultimately, as a result of doing them.... A better way to Do Things for Me and my family in general! Cooking has let me save over 50% on our grocery bill and it has brought our family closer and I know they are getting Great Nutrition...less processed and preserved foods etc... I personally eat Healthy or Health Foods maybe not because it's the Very Best Flavor but, because it is doing something Healthier for my body and it makes me function at a higher lever when I eat healthy...I get up at 5AM not because I Love the getting up early part but, I LOVE the fact that I figured out that getting up that early insures I will get my run in and the result of me running is I have More Energy, A Better Mood for the day, a More Positive Outlook, Weight Loss, Physically Fit, Smaller jeans, Sexier bikini and an Unstoppable Young Attitude...So, I guess I should say I Absolutely LOVE doing the things that make Me Healthier, Happier, and Better then I was before for Me And the people around me. A Positive Attitude is Contagious! Cooking... in all honesty used to be in my mind Chore...mostly because I was afraid to try! However, my attitude has changed along with me and cooking is now viewed as a Creative Outlet and it is Exciting! Thanks for reading....you realize that writing is great therapy for me...if anyone is reading this then I hope it has been therapeutic for you or at least entertaining or maybe has given you a new idea or inspiration:) Peace!

The Challenge.....And a Little Motivation and Encouragement....

In the beginning of Running a Marathon the Motivation, Excitement, Spectator Support and Adrenalin Rush is what is Moving You Mile after Mile....Then Mile 18 comes and there's a Hill, you ran out of GU and there's No Spectator in sight to cheer you on because somehow, your now running through the middle of nowhere....and your stuck with...You. Only You can help get You to the next water station, next mile, ultimately to the Finish Line. This is when you Dream,Pray, Creatively Visualize the Finish (or curse yourself for entering the race) and hope that you will make it...Why am I writing this? Because today I waited for inspiration to come from someone else or just somewhere...anywhere...and it didn't. Like a Marathon, the first month of the blog and budget cutting and running and losing weight etc...etc...was an adrenalin rush....the spectators and excitement and thrill of what it would feel like to finish and succeed were helping me motivate but, now...I'm counting on Me to continue it all....So,after a lot of wasted time today I finally tapped into my Self Discipline and Will Power and I'm writing today to Share...... to Encourage You that Within You Is the ability to succeed and to finish everything you started. If you have been True to your Heart what it is Exactly that you Want, Need, Desire and are trying to Accomplish You Can Succeed. Believe In You and Just Be..Everything Else Will Fall into Place and Work Out. So, with that being said, I'm going to go research some more recipes, clip coupons, and clock some new running routes! IF YOU LOOK WITH AN OPEN, CREATIVE MIND YOU WILL FIND EXACTLY WHAT YOU NEED!

As the cupboards become more bare the creative wheels in my brain are spinning full speed ....I have to admit it's a roll of the dice what may happen.....for example, what I failed to mention and was a little embarrassed to admit was, when I served that amazing Venison the other day...I served it with freeze dried potatoes that I found in the cupboard...I must have had it for a year and got it on sale and thought I'd try it.....well, at least I tried, that's all I can say positive about that because it was pretty disgusting....we didn't even want to feed it to the dog. However, with every mistake comes a lesson and sometimes a laugh, so, it's All Good! Yesterday however, was a success. While digging through the cupboard I found 2 boxes of Matzo ball mix! I had 4 lbs of "store manager special" chicken thighs on sale for 2.86 in my freezer! Added all the fixings for homemade chicken stock and you guessed it the BEST Matzo Ball Chicken Soup! It was seriously so good. So, start getting creative, with the boxes and packages and the condiments because you could have a hearty, delicious, complete meal just begging to get served:) This Meal was about $6.00!!


Here's how it's done:

Buy a box or 2 of Matzo ball mix of your choice and follow the instructions. Leave in the pot until the chicken stock boils

Approx of 2 to lbs of Chicken....I had thighs, use what ever is on sale w/ the bones!
Put in a large pot w/ approx 8 quarts of water.
1 1/2 c celery
1 med onion
4 cloves of garlic diced (or however much you like)
1 c carrots
sea sale and pepper to taste
simmer until it boils then take out the chicken and shred or cut off all the meat.

CREATIVLY SPEAKING.......

The title says it all! I'm going to have to get pretty Creative the next few days because...I'm due for a trip to the grocery store but, I'm holding strong to my Budget goals and I'm determined to stretch the Dollar in order to come through with flying colors, bells and whistles!! I cant wait to tell you what I have spent so far!! Dont be surprised if you see a lot of variations of rice in the next few days!

Speaking of goals......the Running is going Awesome! Up to 7 miles each day. I Highly suggest getting a running partner to run w/ or work out with...makes the time go by so fast and it's extra motivation! Thanks Leslie! Waking up early has definately broken my bad pattern of putting it off until I have time. However, although I KNOW there are No Such Things as Unrealistic Goals, Only UNREALISTIC Expectations..........well, guess what??I'm just a little impatient!! I want it and I want it now:) Meaning, I Really want to fit in the cute jeans NOW although I know I AM in better shape...

So, Here's my plan to help w/ that and I'm going to share with you... a link to a website that has helped me track my calorie intake...because clearly, More Calories are going IN then Energy going OUT in my case! here it is: www.livestrong.com it's Awesome!!

GAME ON PART 2.......AND FOR APPROX $2.00!

Unbelievable, the recipe was a hit! My kids reaction to the Venison Meatloaf was pretty similar to Christmas Morning! They raved about it, ate seconds and I was looking pretty good in the "Mom's a good Cook" category!! Here is what I did...

  • 2 eggs
  • 8oz tomato sauce
  • 1 medium chopped onion
  • 1 cup bread crumbs
  • 1-1/2lbs ground venison
  • salt
  • pepper
  • 2 tablespoons brown sugar
  • 2 tablespoons spicy mustard
  • 2 tablespoons vinegar
  1. In a large bowl, mix together eggs, tomato sauce, onion, bread crumbs.
  2. Add salt and pepper to taste.
  3. Add venison and mix well.
  4. Press mixture into ungreased loaf pan.
  5. Combine brown sugar, mustard and vinegar.
  6. Poke a few holes (I use a wooden spoon handle for this) into loaf and pour mustard mixture over loaf.
  7. Bake uncovered @ 350 for approx 60 minutes

****THE SECRET...NEVER TELL ANYONE WHAT IT IS!! IT IS SO MENTAL...NO MATTER HOW GOOD IT IS..IT'S SO HARD TO DO WHEN YOU KNOW!!

GAME ON!

Literally! Yes, my father in Law went Hunting.....need I say more? My thoughts on Hunting...Well, Let's not go there...I think that is an entirely different blog. Sooooo, with that being said, I have been on the hunt(no pun intended!) for a Venison Recipe....remember, the blog is inexpensive meals.so when someone is giving you food..Take It:) And figure out any details later! Funny, I was a vegetarian for many years and now I'm cooking Venison...Nothing Lasts forever and Change IS Good:) Alright...so the meal is cooking...AND.........

Chicken Broccoli Casserole! EASY, FILLING, AND APPROX $5.00!

I have always Loved this. However, when I heard what the ingredients were, I never wanted to eat it again MAYONNAISE!! I later learned that there are many variations to this but, not before I changed it up myself:)

You Will Need~

2 14 oz. cans of Reduced fat cream of mushroom soup (or broccoli, or chicken)
1 1/2 cups white or brown rice (or more if you prefer)
1lb chicken breast or tenderloins cut in 1/2 inch cubes
approx 1 cup shredded LIGHT cheese of your preference ...I like cheddar
1 bag frozen broccoli
salt and pepper to taste

What to Do~
cook the rice as indicated on package
boil chicken until pink is gone but, not longer
layer the broccoli on the bottom of baking dish 9 X 12
then the chicken and then cover with entire contents of 1 can of soup
then layer the rice and cover the rice with the second can of soup
finally top with cheese Mmmmmmmm
bake on 350 for approx 35 to 40 minutes!

***You could use less soup but, I tried and think it's Tooooooo Dry! Everyone Likes this in my family and I feel great because it is low calorie and VERY INEXPENSIVE:):) xo

Family Dinner & A Fresh Perspective! And A LOT of RAMBLING ON!

Yesterday had to be one of the most fun dinners we have had as a family in a while! I'll admit, I have said many times before "I'm going to serve dinner in the dining room and we will eat together as a family" However, the bar in the kitchen w/ all the chairs around is just sooo much easier! Unfortunately, when I serve everyone there...no one really talks much and there is a sense of disconnect...However, lately, I'm happy to say that in the past 3 weeks we have done a much better job of it! Last night was so fun. I decided I was going to ask everyone to share something about their day or something that is going on in their world. I had planned that I was going to share about my blog and invite them to give me recipe ideas of what they would want to see me cook! Yeah, Success! Everyone seemed to really like the idea, I could really see more and more how important it is to sit down together. I'm not saying It will happen every night but, I aiming for at least 3 nights a week...with the teens, sports, etc...
My Fresh Perspective .......Lately, things are really falling into place for me. I wish I knew exactly what it is but, I do know what has changed that could contribute to it. I have always had a Very Optimistic Positive Attitude..however, I also have had a strong Fear of Failing and Disappointing Myself or Other's...So, I often would stay in a safe place as an Observer. To Sum it up.....I Faced the Fears! I'm Blogging to ANYONE who wishes to read it And, I was probably one of the Most Private people I knew! I'm Running w/ my friend and have given Up My "I Run SOLO Attitude" And It has been the Best change I could have made. Also, I have always said to myself " I'm supposed to do something Bigger, I'm just not sure what it is" Well, I have had so much Positive, Supportive, Inspiring, comments, questions, feedback and Thank you's for this blog AND for my Positive words of encouragement... I have decided maybe it could be a step in the right direction to the "Bigger" thing I'm supposed to be doing...Do I think these recipes are anything special ...not really and I know you could research and get them online yourself(except for the one's I make up)...However, what I do think is that people want to identify with someone who is not perfect, someone trying to change for the better, make positive changes and who is facing a lot of the similar challenges life brings along the way YET, finds a way through Positive Attitude and Love and Support to Make each Day the Best. So, what is the fresh Perspective?? It is that I am Learning just how much we all need eachother and nothing can Really, Happily be Accomplished Alone. I think my first thought about this blog was "I'm Giving something to You, the Reader" But, the Reality is that By reading, You are giving Something to me... Motivation, Encouragement, Support and Positive Energy which helps me to continue reaching my goals and the desire to Challenge myself and to make more goals. I'm sure you have heard before "We are all in this together...I believe we truly are connected and there are no coincidences...So, I'm Rollin' with it! This is pretty therapeutic..you should try it!

"HIGH AND MIGHTY" JAMBALAYAH FOR APPROX. $15.00

I once worked with a guy from Alabama. I remember sitting in the break room, I was approx. 6 mos. pregnant with my daughter, I splurged and ordered an amazing lunch from The Cheesecake Factory. Well, when Greg, (the guy from Alabama) walked in the break room and saw my meal he stopped and said(in his adorable Southern accent) " OoooH My, You sure are eatin' High and Mighty today, Mmmmm, Mmmm!" Then he proceeded to tell me that was how his mother spoke about "Fine Dining". I thought it was adorable and from time to time I would repeat that line and attempt to say it in my best Southern accent. Well, after all these simple, low cost meals I have been making, I decided to splurge and serve a "High and Mighty" meal to the family. I went from 4 and 5 dollar meals to a whoppin' $15.00 Jambalayah (still for a family of 6 2.50 per. person is not bad)!! Yes, I still bought on sale and cut a few corners with the ingredients but, it tasted amazing and it was extra delicious the next day(my husband ate it ALL). It is on the spicy side so if your cookin' for little ones maybe go easier on the seasoning. I found this recipe on allrecipes.com and I did make my own modifications...I added scallops and got the idea for Worcestershire sauce from a different recipe. I hope you like it and enjoy yourself a fine High and Mighty meal !

Here is what you will need~
  • 1 pound skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 1 pound andouille sausage, sliced (look for LEAN, and I could have used 1/2 lb, it's up top you)
  • 1 (28 ounce) can diced tomatoes with juice
  • 1 large onion, chopped
  • 1 large green bell pepper, chopped
  • 1 cup chopped celery
  • 1 cup chicken broth
  • 2 teaspoons dried oregano
  • 2 teaspoons dried parsley
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme
  • 1 pound frozen cooked shrimp without tails
  • 1/2 lb scallops (you can also add crab meat, I think I'm going to next time)
  • 1 tblsp Worcestershire sauce OR BB-Q sauce!! (I'm trying that next)

How It's Done:)

  1. In a slow cooker, mix the chicken, sausage, tomatoes with juice, onion, green bell pepper, celery, and broth. Season with oregano, parsley, Cajun seasoning, cayenne pepper, and thyme.
  2. Cover, and cook 7 to 8 hours on Low, or 3 to 4 hours on High. Stir in the shrimp and scallops or crab during the last 30 minutes of cook time.
It's so fragrant and looks so good you'll feel like a Gourmet Chef:):) Good Luck!

*****BTW......ONLY ONE MORE WEEK UNTIL THE END OF THE MONTH....CAN YOU GUESS HOW MUCH I HAVE SPENT IN GROCERIES????? I THINK EVERYONE WILL BE SHOCKED!!!!!!!

Just when You Think it's going to be Bad...It turns Out to be Great!! STEEL CUT OATMEAL FOR APPROX. $3.00!

So, The title of today's blog really has nothing to do with the Steel cut oatmeal recipe I'm going to post. However, it is part of the reason I wrote that title. Truthfully, I woke up in a terrible funky, funk! I had been on a roll with my working out and this morning I just couldn't talk myself into doing it at the normal 5:30 or 6am. Which caused me to be hard on myself and a bit depressed. I also was mad at myself for indulging in that vino last night in which caused me to go for the extra serving of dinner!!!Ugh, I felt like I took 5 steps backwards. Just when I was ready to feel sorry for myself I got an e-mail from my friend asking if I wanted to go running...!!The day began to start looking a bit Brighter! YES, I was out the door in 5 minutes, it was just the Motivation I Needed! Today's run was even longer..a nice unexpected challenge to top it off and I'm feeling Good. Now, as I have been cooking more often there is still a small fear that lingers over me that my family will not like what I have made...and that You may not like it...However, to my Surprise, when I walked in the door after my run, my 3 1/2 year old, Grayson was eating the oatmeal and he finished it all! My husband Loved it and had 2 big bowls and my older son Loved it also!(The other 2 kids weren't home to try it yet) A big sigh of Relief came over me! What makes this oatmeal so great is that it is unlike the instant oatmeal that has so much sugar. Also, steel cut oatmeal has a lower Glycemic Index then rolled oats. AND just in case you dont know what that is(I didn't for a long time) This is the measure of effect the carbohydrates have on blood sugar. ..carbs that have a high GI release glucose faster into the blood stream and vise versa for carbs that have a lower GI. If your watching you blood sugar or if your diabetic...that is good to know:) The day seemed to continue getting better, I also received a supportive e-mail from another friend that made me feel Great! My day had completely Turned from Bad to Great with the help from my friends and family. So, whenever your feeling bad call a friend or look to your family for support, chances are you will get all that you need as long as your willing to open your mind and heart to it and Accept it because YOU DESERVE IT!!

*****THIS RECIPE IS BEST DONE LATE IN THE EVENING SO IT WILL BE READY FOR BREAKFAST! IT TAKES APPROX 8 HOURS! AND YOU GET TO SLEEP THROUGH IT ALL:)

***I got the idea for this recipe on the food network website but, I tweaked it of course:)

1 c steel cut oats
4 c water
1 c orange cranberries
1 c figs, dates or raisins
1/2 tsp cinnamon
dash of nutmeg
1/2 tsp vanilla
HONEY to sweeten once its done and a splash of milk if you like:)

*** I added some of my homemade granola on top also***

Directions

In a slow cooker, combine all ingredients and set to low heat. Cover and let cook approx 8 hrs. Stir and serve Mmmmmmmmmm Good:)

Healthy Granola for $5.00, and A Lot of Good Stuff I'm Learning

Well, I have to say, some really good things are coming from this blog....some things I expected and some I did not. I did expect to cut the food budget and I did expect that the pressure of not having enough recipes would keep me consistent in continuing to cook so I would have something to post...because how embarrassing to start a blog then have nothing to share. However, I have noticed that cooking is bringing the family closer and some Memories are being made. Wow! Last night Madeline finished making the Spaghetti dinner as I was preparing the Granola (working TOGETHER in the Kitchen) and through the evening the house smelled like a bakery and everyone was anticipating the outcome of the granola. This morning as I packed the lunches and put the granola in baggies the kids sampled the granola and even said they wanted it for dinner! I think there is a good feeling for everyone when the food they eat is homemade, special, and it is for them. Also, I'm doing much more research and I am learning so much. Here is what I learned ...So, the granola was 5.00....I know you can buy a bag of granola for less. However, my recipe was probably double the size you would buy in the store and even more important.....it is MUCH HEALTHIER! Why? Because the ones packaged in the store are USUALLY made with high fructose syrup and other things like SUGAR And Partially Hydrogenated OILS! YUCK! If you were to buy one that did not contain that it would be the more costly bags in the store. So, making it homemade makes the house smell delicious, creates memories, and is so good for you! I hope you like this recipe, the great thing is if you dont you can use the main idea and add your own ingredients..that's what I do :) This is a great gift idea...cute decorated bag with a nice bow and gift tag...The possibilities are endless. **I found this recipe in a site called associated content and it was submitted by Missy Dodrill...However, I did change a few things.....I LOVE that the ONLY sweetner is Honey!

INGREDIENT LIST
3 cups of rolled oats, instant or regular oats
1 cup of shredded coconut
½ cup of shelled sunflower seeds
½ cup of almonds( I used slivered)
½ cup of cashews( I used halves)
Dash of cinnamon
Dash of nutmeg
2/3 cup of honey
¼ cup of vegetable oil (Im not a fan of veggie oil...I used olive oil, I bet a nut oil would be great!)
**********For the dried fruits...I used orange/cranberries and dates!

Mix all the above ingredients together and cook on low setting in the crock pot. Make sure to keep the lid slightly off to vent. Stir every half an hour and cook for 4 hours. When it is finished cooking, after 4 hours, it will be soft. It will harden after it sits for a little bit.

After the granola is done cooking, now is the time to add dried fruits, cranberries, and raisins. If these items are added during the cooking process, they will get hard. Use 1 ½ cups (more or less, depending on your liking) of all combined fruit you want to add.

I LOVE COOKING AND.....BEEF BARLEY STEW FOR 8.00!!

Why Do I LOVE to Cook?? I LOVE Knowing Exactly what is In My food! I Love knowing that the fooD I eat is serving a purpose....to Nourish, and Fuel My Body! I Love Knowing that the Ingredients are Fresh, and Healthy and Low In fat and Calories and LOADED with Flavor! We Have a Choice In Everything We do...Attitude,Responsibility,Love,Kindness,Exercise etc...etc... and FOOD! I Love teaching My Kids about the Benefits of Eating Healthy AND I Love that My Kids CHOOSE to Eat Healthy! Don't Get Me wrong...I Do LOVE Desserts but, In small doses:)

Sooooo, With All that being said....Yes, I did make Beef Barley Stew for 8.00 And this was a Challenge because I don't buy red meat very often...meaning I really have NO CLUE how to cook it:) So with a little research, I learned that the best thing to do is to Brown the cubes of beef in a skillet first BEFORE putting it in the Slow Cooker. So, That's what I did! Everything else was Slow Cookin' All the Way!

Here is what you need~


1 pound lean beef stew meat, cut into 1/2 inch cubes
1 cup uncooked pearl barley
2 tablespoons flour (I like it a bit thicker)
black pepper to taste!!
sea salt to taste!!
2 tablespoons oil (to brown the beef cubes in first)
1/2 cup onion, diced
3 large stalk celery, sliced
A Lot of Garlic!!! I Used 4 Cloves chopped:)
3 carrots, sliced 1/4 inch thick
2 bay leaves
1 14 oz can diced tomatoes w/ juice
1/2 can tomato paste
1 tsp paprika
1 tsp Oregano
1 tsp dried Basil
2 cans Beef Stock (NO MSG)

* Place all ingredients in Crock Pot except the broth! Add the beef on top after browning all sides in a skillet. Add the beef broth. If the beef is not covered w/ broth, add water to cover. I cooked on HIGH approx 6 hours and served with French Bread!

SPLIT PEA SOUP in the Crock Pot......Mmmmm

The most expensive ingredient in this recipe was the bacon that I bought on Sale(Of Course) for about 2.50! The peas were 79 cents! And less than that for the potatoes and celery! Making the Approx total for this complete meal around $5.00!! AND, The Great thing about this soup is that even if you don't like peas.... chances are You will Love this soup! I Know this because My Husband has serious PEA Radar...he can find a pea in any meal and pick it out however,I'm pretty sure he had seconds of this meal:) I searched online to find a very likable, simple, but, delicious recipe that the entire family would enjoy. I found this one on About.com and it was submitted by: Diana Rattray. I'm not sure of all the facts about posting someones else's recipe so I'm basically just Trying to Cover My A** here! I did change it a bit of course to make it a little more Michelle style:) I hope you like it. BTW, the Jambalaya I made last night was Awesome flavor but, something was missing and I need to re-make it to figure out what it is but, as soon as I master it It's gonna be Amazing! Have a Beautiful Day filled with Love, Opportunity, and Potential.

Ingredients:

* 8 slices bacon, diced...............(I used Turkey Bacon to cut some fat)
* 1/2 cup chopped onion...............(I used a cup, yellow onion)
* 2 ribs celery, chopped..............(I used 3)
* 8 cups boiling water
* 1 pound split dried peas
* 3 sprigs parsley
* 1 tsp. thyme
* 3 potatoes, peeled and cubed.........( I wanted it thicker, so I used 4)
* 1 tsp. salt .........................( I used more...maybe a tablespoon!)
**********************I ADDED PEPPER!!!! AND LOTS OF IT!!)
**********************AND, I almost forgot...You Can never add too much GARLIC <3

Preparation:
Place all ingredients in slow cooker. Cover and cook on LOW for 8 to 10 hours. Before serving mash ingredients carefully with potato masher, until as thick as you like; stir well. Makes 12 servings.

**********THIS SERIOUSLY WONT LOOK DONE UNTIL THE LAST 1/2 HOUR AND YOU WONT EVEN NEED THE POTATO MASHER MUCH!)

16 Bean Soup......and a little rambling too:)

While running this morning I thought entirely about how I was going to introduce these recipes which are the reason for this blog in the first place. I know it sounds like a no brainer...Just write down the ingredients already! but, I was feeling the need once again to explain a few things. First of all, if you don't know me it might be a good thing to know that I'm not as domestic as it may seem being that I'm writing a blog about Healthy,Easy Inexpensive recipes. I know that could sound pretty impressive to some...like I really got it together but, I'm really just winging it and hoping you like it as much as my family has. I'm not a gourmet chef or a professional in the cooking field in anyway! I often will modify recipes I have seen on the internet to make them healthier or to suite to tastes of my family. I am on the more healthy conscious side so I wont use a lot of ingredients that add un necessary fat, sugar, MSG,calories etc... I also make stuff up and hope for the best...so, sometimes If I have not written down the recipe, I may never remember to make it again. Truthfully, I have been the complete opposite of Domestic most my life! I overcooked spaghetti and burned brownies! I did not start cooking until I got married in 2004...and even then I became more of someone who PREPARED food. Thanks to Trader Joe's and Costco I was a pro at buying the pre cooked bags of Teriyaki Chicken and the pre cooked frozen bags of rice and heating it up and there I had it, instant PREPARED dinner! To feed my family of 6 it would take about 3 bags of Chicken and 2 boxes of rice and a whole bag or 2 of edamame ...approx 20.00 a meal(I have 3 teenagers, 2 of them boys and a 3 1/2 year old boy). I know, not bad, way better then eating out every night but, there's still 6 more dinners left in the week, that is a lot of groceries and a lot of grocery shopping and there's no left over's. I discovered soup and stews are easy,healthy and filling. I got very acquainted with my crock pot and started searching on the internet for recipes AND I got better at cooking and developed a LOVE for cooking...mostly the re-creating a recipe part:) Since my goal is to cut the grocery bill in 1/2 obviously paying very close attention to the cost of ingredients and the total cost of the meal became a sorta hobby. It's exciting to see how little you can make meals for! So, as I post the recipes, I'll add the approx. cost of the meal...Keep in mind, I Always buy food on SALE!! To me there is no reason not to and why pay full price? Most times the meals are decided by what I found on sale at the store! So, feel free to help me out with any recipes, you'll be sure to get full credit:) Thanks for listening to me ramble on again....I just had a HUGE cup of coffee!!


16 Bean Soup in a Crock Pot!(I made this for approx $5.00)

INGREDIENTS
1 package 16 Bean Soup (it's just a pre-made bag of beans!)
3 bay leaves
1 tablespoon crushed oregano
2 cans no-fat chicken stock(make sure NO MSG!)
Additional water to cover
3 stalks celery chopped
3 carrots diced
1 large onion chopped
3 cloves garlic sliced
1 pound turkey Italian sausage sliced( I found ON SALE Very lean!)
2 cans stewed (or diced) tomatoes
(I also added Lean Ham!)

DIRECTIONS
Combine first 5 ingredients (liquid should cover mixture by 1"-2") in Crock Pot Cook on high for 2 hours Add remaining ingredients and shift cooker to low and cook for additional 3 hours If your makin' it Spicy... add cayenne or crushed red pepper. And, I'm Never afraid to add Garlic to almost EVERYTHING:) Salt/pepper to taste.
***Obviously if your crock pot is smaller just guess at taking out some carrots, celery etc...

****Here is my trick for enough leftovers for everyone: Once the 1st meal is served see what is leftover in the pot.....add a cup of cooked rice, some more sausage(cooked) and some more broth and there you have another serving of leftovers!!! It becomes 16 bean soup with rice!!

Commitment!

It's 7AM and this is the first morning in 8 days(since I started my New running routine)that I canceled my early morning run. I woke up so tired and it's very wet from the rain. I don't like running in Rain. However, I made a Commitment recently to run Everyday for an Hour So, I WILL be going to the club later to run and make up for it. I know this does not have anything to do with Recipes but, In my crazy head I do have a reason that this all fit's in.And of course I feel the need to share it with you:) It's The word Commitment. I think it's important to go back to the part in the 1st blog entry where I Promised myself I would make grocery lists, etc...etc..etc...Because if I did what I said I would do there would Not have been MORE months of grocery bills over 1,000. However,It kept happening because I did Not make a Commitment to Cooking more meals and so I followed the same PREPARING routine of meals with the occasional Awesome breakfast burrito AND Healthy Cookies:) while I Said I WANT to cut the Grocery bill in 1/2. Why am I boring you with this?? Well, because I know I'm not the only one who has Said they Want to Have something, Or Want to Accomplish something or Do something different and then they Never end up doing it Or they are STILL Saying the Same thing 2 years later (like me and losing weight).Yes, I Know, I'm Not Fat...I just want to fit in the clothes I used to fit in 6 years ago... Then I went on a nice walk with my husband one day and I began once again my routine conversation telling him how I was going to get Back to the weight I was when I met him 6 years earlier and wear those cute jeans, remember? blah,blah,blah! He always listens to this Same story and offers the right amount of support but, this time was different...He calmly said to me "Are you sure that's what you want?" I was shocked!! Of course that's what i want, Why wouldn't I want to be 15 lbs lighter?? Then he said, "Maybe you just WANT to Want to." "If you REALLY wanted to lose 15 lbs. you would." OUCH! Big OUCH!I couldn't believe what I was hearing but,after some practice in Calming the Mind and Thinking before I speak and deciding I didn't want to start a fight I admitted to myself and to him, He Was Right...I didn't know what to do though. It was true, I wanted to wake up one morning and be the way I used to be but, with no effort on my part. I wanted to want it...but, I just got stuck in my Patterns. So,Progress was made, after the seeds of this journey have been planted over and over I was finally closer to knowing that Something Was really going to change but, I still needed that push. I typically get inspired by something profound that I read in a self help book, or quotes from amazing people and My Friends and this time it came in an e-mail from a website called Motivation in a Minute. I don't even know how I got on the list but, I watched 212 the Movie that was e-mailed to me and there it was in BIG letters "YOU ARE RESPONSIBLE FOR YOUR LIFE" Duh, I knew this but, then it read "IF YOU WANT TO GET WHAT YOU'VE NEVER HAD YOU MUST DO WHAT YOU'VE NEVER DONE" I know it is nothing New, We Know this stuff Right? However, in a time when your..Searching, When Your Mind Is OPEN, Sometimes that One message that is presented at the Right Time , in the Right Way is the One that can changes your life! It Changed Mine. I couldn't wait to take control again. I knew all along that sometimes we just need to look within ourselves for the answers because they are all there. I just needed to be reminded. It also helped that this video, 212 Movie, had a powerful presentation which made me feel a little guilty for doing Nothing for So Long. I Got a Powerful Message from the movie. My COMMITMENT to running and weight loss AND Cutting the food budget has started and is moving in Full Force.Below is the link to the video in case you have not seen it before. I hope it reminds You how Powerful You Are like it did for me. Oh, and I swear, Recipes are coming very sooooon, I think it's important that you knew what helped me get to this point...Or maybe Im writing a Suspense Blog.....hmmmmm.

Cutting the Food Budget in Half!

About 4 months ago I was shopping at Costco. I put the normal items in the cart that I would use to PREPARE meals for my family of 6. I also added the items that my 3 teenage kids could HEAT UP and PREPARE all by them self. When the woman gave me my total it was just over 500.00...GASP! I pretended like that was what I intended to spend and with an expressionless face I handed her my debit card. My heart began to beat faster when all the other bills left to pay on my desk at home were flashing in my mind. Then I got serious, seriously stressed out. It had only been 2 weeks since I had been to Costco and spent 400.00! Wait...Oh Yes, it gets better...I had also made random stops to Trader Joes, Henry's, Jimbo's and Albertson's. When I got home I got online to my online banking account and realized I had already spent 1200.00! So, being the Positive person that I focus on being, I quickly tried to find the positive in this situation.....And I smiled as I said to myself " Well, at least there's only one week left in the month and we wont need to go back to the store next week!" So, the month ended with 1200.00 towards FOOD! I promised myself I would make grocery lists, make fewer trips to the store, buy on sale, eat the leftovers, etc...etc...etc...So, I'm sure you can guess what happens next. Right! Nothing happened. I did look for items on sale more often and when I went to the grocery store I spent less but, I just ended up going more often so the $$ added up and the next few months were the same...grocery's for the month averaging over 1,000.00!
HAPPY NEW YEAR 2010! My Goals for the New Year...lose 10 to 15 lbs AND get in great Shape AND....Yup, You Guessed it....Cut Our Monthly Grocery Bill in 1/2!!!!
In my attempt to revamp the grocery list I needed to see what was wrong and this is where I go back the the capitalized "PREPARE"! I needed to STOP preparing food and Start COOKING Meals! So, I went to the grocery store for the 1st time in January and spent a 54.00! I made my 1st meal for under 5.oo!!! I posted it on facebook and this is where things started to unfold. It seems that a lot of people are interested in finding out HOW to not only SAVE money on food but, HOW to cook EASY, DELICIOUS meals that appeal to many people AND serve A Lot of People AND are good as Leftovers. My Husband first mentioned I should start a blog. I said "No Way". Then My running friend suggested it and I think I actually thought about it for a moment but, quickly thought to myself, "No Way" THEN, I watched the movie Julie & Julia....and here I am.
